Nom, Nom, Nom Vegan Fritters!

I have to tell you something...I am not much a housewife. I work from home and I clean when the dust bunnies have turned into rabbits or we have guests. I cook the usual week meals of dull and duller for Mr.Bailie and I don't wish or care to see what Delia or Jamie suggest. Eek! BUT...blow me down, last week I started following Naomi Rose on Twitter only to discover that Naomi was behind an amazing blog called "The Gluttonous Vegan". I am a serious meat eater...which I think means I am serious about meat and I am definitely guilty of thinking vegetarians and vegans are just propoganda for kids to eat healthy, but this was only due to my meat blinkers. The Gluttonous Vegan is filled with vegan recipes and treats for all people with mouths.
A particular recipe created by TGV that caught my eye was the 'Chickpea and Mint Fritters'. On that day I was trapped inside due to heavy snow hitting the Sussex countryside and could not forsee a prison break to get chinese food, but I desperately wanted 'a treat'. A treat is what I had, I followed Naomi's recipe easily and withing 10 mins I was chowing down on a vegan treat! Even Bailie boy was impressed. (Thanks Naomi x).
Today I made some more for my lunch and this time I had time to take pics and marvel at my greatness all thanks to The Gluttonous Vegan.
I added tomatoes and rocket to hide my frying guilt!
