If it's Not One Thing, it's Your Mother & Recipe of the Week

Hello friends! I hope you all had a wonderful Mother's Day. Mine was not much like I dreamed about due to ugly weather but I'm getting a rain check on that part of it. Due to extreme garage sale exhaustion we didn't make it to church but we did have a lovely breakfast out, lots of snuggling and Sweet Hubby was kind enough to run and get me a chicken salad sandwich for lunch. Unfortunately he ran into our pastor at the deli & when asked where I was that morning replied that I was at hope sleeping it off. Nice. We're currently shopping for a new church. He did try to make it up to me by getting me this long coveted food processor. I'm so excited. We already broke it in making lemon bars yesterday afternoon, can't wait to try pie crust in it.
The sale was a huge hit and now I have a good amount of money to play with in the decorating slush fund. I'm off to spend some of it this morning. But first I might have to have a nibble from what's left of these.
Luscious Lemon Bars
2 1/4 cups flour, divided
1/2 cup powdered sugar
1 cup butter, softened
4 large eggs
2 cups sugar
1/3 cup lemon juice
zest from 2 lemons
1/2 tsp baking powder
powdered sugar
Combine 2 cups flour and 1/2 cup powdered sugar. Cut butter into flour mixture with a pastry blender (or your fancy new food processor!) until crumbly. Firmly press mixture into a lightly greased 13x9 pan. Bake at 350 degrees for 20 to 25 minutes or until lightly browned. Whisk eggs in a large bowl; whisk in 2 cups sugar,lemon juice and zest. Pour batter over crust. Bake for 25 minutes or until set. Let cool completely on a wire rack. Cut into bars, and sprinkle evenly with additional powdered sugar.
Nutritional info: These have no calories or fat as long as you just slice off a narrow row each time you walk by and eat while standing up in a place where no one can see you.
