Sweet Things

Here's a treat to make your Monday a little sweeter. This is the girls' favorite cookie to have packed in their lunches. They disappear fast.
Jen's Favorite Peanut Butter Cookies
Preheat oven to 350°
1/2 cup shortening
1/2 cup butter, softened
1 cup brown sugar
3/4 cup sugar
1 1/2 cups peanut butter
2 eggs
1 1/2 cups flour
2 tsp baking powder
1 tsp salt
1 cup quick cooking oats
Cream together shortening, butter, sugars and peanut butter til smooth. Beat in eggs one at a time until well blended. In a separate bowl combine the flour, baking soda and salt. Stir into creamed mixture. Mix in the oats just until combined. Use cookie scoop and drop cookies onto ungreased cookie sheet. Bake for about 13 mins til edges are just browning. Do not overbake. Let cool for 6-8 mins then transfer to wire rack to finish cooling.
Notes: If you're feeling really decadent you can put chocolate chunks in these. This recipe yields 27 large cookies if you don't eat any of the dough while you are making them. I've personally never had 27 cookies. Enjoy!
Just typing this recipe and looking at these pictures has me wanting to run for the cookie jar. Must.be.strong.
