Jen Recommends

A quick post to say I'll see you after the holiday! I hope all of you have a wonderful day. I'm looking forward to getting caught up with all of you later in the week as the madness of the holiday winds down. I noticed several new people left comments on my last post and I'm looking forward to coming to visit all of your blogs. I wanted to leave you with a recipe that you might like to try for Granola Bars. They are easy, delicious and keep well. I also wanted to share some Flickr magic with you that is inspired by the 4th of July.
Granola Bars
2 1/2 cups rice crispies
2 cups quick cooking oats
1/2 cup raisins (optional)
1/2 cup light corn syrup
1/2 cup brown sugar
1/2 cup peanut butter
1 tsp vanilla extract
1/2 cup chocolate chips
Combine cereal, oats and raisins in a large bowl. In a small saucepan, heat the corn syrup and brown sugar to a boil, stirring constantly. Remove from heat. Stir in peanut butter and vanilla and blend until smooth. Pour this over the cereal mixture and mix well. Add chocolate chips and mix thoroughly. Press into an ungreased 9x13 pan. Cool. Cut into bars.
