Recipe of the Week- Jen's Lemon Vinaigrette & A Rant

Well, Sweet Hubby is home. I don't think I'm speaking to him though. He knew what I was doing the whole time. Turns out he reads my blog. Who knew? He read of my evil plan & actually had the nerve to keep that information secret from me. Can you imagine being so sneaky with your spouse? So every time he asked me what I was doing or what my plans for the day were? He knew. Every time I almost blew the surprise by mentioning I had to run out for paint rollers or that I was sore and tired from painting? He knew. The. very.nerve.of.that.man.Lemon vinaigrette
1 large or 2 small cloves garlic
2 Tbsp white wine vinegar
2 Tbsp fresh lemon juice
1 tsp dijon mustard (there is no substitute for dijon)
1 tsp sugar or splenda
1/2 tsp salt
1/4 tsp ground pepper
1 cup olive oil
Combine all ingredients except olive oil in a food process and pulse til garlic is minced. Add olive oil in a slow, steady stream. Pour into jar with lid and shake before pouring on salad.
Notes: This recipe can be done by hand as well, mincing the garlic and then whisking the other ingredients together but you girls know I have to use my new food processor whenever I can justify it. I think this would also make a great marinade.
